Easy Recipe #3: Sarah’s Fall Soup

So I totally made this recipe up….although I’m sure if I searched enough, I could find a recipe pretty darn similar to it. That’s the funny thing about soups, I guess. Either way, this recipe totally hits the spot if you are looking for a warm, healthy, and hearty dinner that you can let simmer in a pot all afternoon.


  • 1.5 pounds ground turkey
  • 5 carrots sliced
  • 1 small yellow onion diced
  • 2 cups kale (not pictured)
  • 1 can diced tomatoes
  • 1 can black beans
  • 1 can garbanzo beans (chick peas)
  • 2-3 cups water (you COULD use chicken stock if you want more flavor)
  • Salt and pepper to taste
  • Oregano
  • Rice

You just need one pot, a couple of hours, and you’ll have a meal!

Cook down the turkey and onions, add the carrots and cook (with the lid on) until soft, add the rest of the ingredients (except the rice), and cook as long as you want! The longer you cook it, the more flavorful it will be 🙂 I cooked ours for 2 hours and served it over rice.  It was delish! Enjoy!
